Tell me more | Meet your hosts

We’re big fans of English wine at THE PIGs and are lucky enough to have some serious winemaking rockstars right on our doorstep, like our friends at Charlie Herring Vineyard – it’s why you’ll always find a good helping of their Chardonnay, Sauvignon Blanc and Reisling on our wine list (heads up, they are  the only vineyard in England making Riesling. We told you they were legends!).

Guided by owner and producer, Tim Phillips, and THE PIG’s Head Sommelier, Jack Evans, this will truly be a one-of-a-kind afternoon, as the vineyard, set in a 19th Century walled garden in Sway, is rarely open to visitors – so don’t miss your chance to be part of it!

Meet your hosts

We love Charlie Herring Vineyard not only for their exceptional, high-quality English wines, but because they also share our commitment to supporting biodiversity and creating a sustainable viticulture.

The vineyard is nestled next to an orchard and is home to a happy flock of chickens, who wander freely among the vines, helping with natural pest control and promoting a balanced ecosystem.

Spend the afternoon discovering it for yourself with your hosts, before heading back to THE PIG for a four-course, summer-inspired feasting lunch in our private dining room, with plentiful pours of Charlie Herring wines that have been perfectly paired with each dish.

Take a peek at the menu

The free-range chickens are very friendly and won’t be shy to approach you – please be mindful that they may give your shoes a soft peck, so please make sure you’re wearing appropriate footwear!

For this experience, guests will need to make their own way to the vineyard, which is around 15 minutes from THE PIG, before continuing on to the winery, approximately 4 minutes away by car. As taxis can be limited in the area, we would recommend driving where possible. Please note that parking at the vineyard is limited to three spaces.

When, where, how much…

Tim Phillips

Tim Phillips is an English wine and cider producer, best known for creating the “Charlie Herring” label from his tiny, biodiverse walled vineyard and orchard near the New Forest.

Originally trained and working as an accountant, Tim later moved into the wine trade after time spent working abroad, including in Italy and studying winemaking in South Africa. He eventually returned to his family’s roots in Hampshire, where a chance discovery of an overgrown Victorian walled garden led him to establish what would become his life’s project.

Under the Charlie Herring name (taken from a fictional character created by his father!), Tim produces very small quantities of natural, low-intervention wines and ciders. His plantings include varieties such as Chardonnay, Riesling, Sauvignon Blanc, and Pinot Noir, alongside traditional cider apples and pears.

Production is extremely limited (only a few thousand bottles per year) and the wines are often experimental, combining grapes with cider apples or lees to create distinctive, unconventional styles.

Jack Evans

Jack Evans is our Head Sommelier at THE PIG in the New Forest. Having joined THE PIG in 2021, Jack has naturally climbed the ranks, beginning his career as a Trainee Sommelier with the opening team at THE PIG-in the South Downs.

THE PIG is committed to helping develop its people, and Jack’s infectious passion and expertise naturally shone through, which led him to become Assistant Head Sommelier at THE PIG-near Bath in 2024. Soon after, he moved to our flagship PIG in Brockenhurst in February 2025, and became Head Sommelier.

‘In my role’, Jack says, ‘I’m fortunate enough to lead our wine programme, work alongside a dedicated group of exciting sommeliers, and have autonomy over the wine list – much of which varies from the classics to homegrown wines to more esoteric styles!’.

Everything you read and taste from our PIG wine menu has been carefully and thoughtfully considered by Jack and his team, to make sure you have the most relaxing, fun, delicious and spoiling time with us.

Fancy making a night of it?

Why not turn the afternoon into a proper PIG getaway and book a room for the night? Wander from the lunch to a big comfy bed with no need for taxis or designated drivers. Just you, a bedroom so comfy you won't want to leave… and maybe a cheeky extra nightcap to round off the evening!
